If you’re like me, you probably never thought of zucchini as a nutritional powerhouse. Well guess what, they are! How did I not know this all this time?? Maybe I’m just very forgetful. Anyway, zucchini are loaded with potassium, Vitamin C, A, K, manganese, lutein, fiber and folate. That’s fantastic because they go with everything and thrive with just about any cooking method.
