I mention every chance I get that I prefer most fruit raw, for taste and health benefit. Blueberries are no exception. My Mom makes amazing fresh fruit pies and it’s hard to pick a favorite. But since it’s Blueberry season and she just made her family famous Blueberry Pie, I’m going to say this is my favorite. This pie does cook a small portion of the total amount of blueberries in the pie to act as natural glue to hold it all together. The majority of the blueberries are raw and the pie is a bottom crust only. The crust here is just a vessel. The blueberries are the star of the show. I don’t know where my Mom got her recipe. I would swear it was a Martha Steward recipe originally, but I couldn’t find it in her collection. But I did find this recipe which is almost identical - Fresh Open Faced Blueberry Pie by Rose Levy Beranbaum.
